Green Mango Smoothie


Wow - where has the time gone? It feels like forever since I've been here. Since I've had the time in some natural light to get down in my kitchen and create something for this space. Overwhelming. Its the only word that comes to mind when I try to sum up the past few weeks. Overwhelming - in every sense possible. Holidays and visits and dinners and probably a bit too much cheese but who's counting - and well all of a sudden its mid January and we are just finding the time to catch out breath. My family has come and gone, the visit was far too short and the time between now and the next one will be far too long. Goodbyes - I don't know anyone who likes them or who really knows how to deal with them.  Trying to hold back tears and hoping that the others try too because otherwise you know they will never stop falling. Watching the car pull away and feeling that sinking feeling in your chest of a heavy heart because you already miss having them around. That lingering feeling that something is missing that follows for a few days until you get back to routine - to life as you know it. This is where I'm at. Reliving the moments that I wish could last forever, and feeling like the luckiest daughter to be part of a family that crosses oceans to be together. 


My mood is very much related to what I eat - the better I eat the better I feel. And while I am not a big believer in january resolutions or in feeling guilty about all I ate over the holidays - it is always a great time to regroup and re set, and this morning I was in the mood for something fresh and nourishing, for body, mind and heart. Smoothies are a quick and easy way to add vegetables to your morning meal, and even though green smoothies may seem scary at first, you'll see that they still taste like breakfast and not so much like a blended lunch. After the holidays seems to be the time when everyone catches a cold, so pump up this smoothie with as much fresh grated ginger as you like. Fresh food, fresh thoughts, happy hearts.


Green Mango Smoothie

Ingredients

  • 3/4 cup mango, fresh or frozen
  • 1/2 tablespoon freshly grated ginger
  • 1/2 cup spinach, packed
  • 1/2 teaspoon agave nectar
  • 3/4 cups coconut water

What to do
  • Place all the ingredients in a blender and blend until smooth, add water or more coconut water if you need more liquid until you get your desired consistency. Enjoy!
